The Canadian Food Guide to Healthy Eating recommends five to twelve servings of grain foods each day.  Health professionals also encourage enjoyment of a variety of foods within the grain group.  Including barley is a tasty way to generate this variety; it is a good source of dietary fibre, protein and complex carbohydrates.  Today's cooks incorporate various forms of barley in vegetarian dishes, salads, cookies, breads, biscuits, cakes, and muffins.

Where is it available?
- Pot and pearl barley are found in the legumes/noodles aisle.
- Rolled or flaked barley is sold in bulk at most health food stores.
- Look for  Hamilton's Barley Flour in the baking section of Canada Safeway & Calgary Co-op.

Here are a few hints on how to incorporate barley into your meals:

Save time by cooking pearl barley or pot  barley a day ahead.  
Refrigerate it and heat the following day, or freeze it in portions for future quick meals
Cook barley in broth to create different flavours.
(Usually 1 part barley to 3 part liquid.) 
Create your own soup mix using pot barley, lentils, split peas and spices.
Enjoy the new taste of soups and gravies thickened with barley
