The Canadian Food Guide to Healthy Eating recommends five to twelve servings of grain foods each day. Health professionals also
encourage enjoyment of a variety of foods within the grain group.
Including barley is a
tasty way to generate this variety; it is a good source of
dietary fibre, protein and complex carbohydrates. Today's cooks
incorporate various forms of barley in vegetarian dishes, salads, cookies,
breads, biscuits, cakes, and muffins.
