"The" Best Banana Bread or Muffins
A big batch, barley adds a tasty and healthful twist to this old-time favourite


2/3 cupcanola oil 2 cupsgranulated sugar
4eggs 5-6very ripe bananas
2 tsp.baking powder 2 tsp.baking soda
1/2 tsp.salt 1 cupwalnuts and/or chocolate
4 cups    Hamilton's Barley Flour

Easy and fast, One Bowl Method
- In a large bowl combine oil, sugar and eggs and beat until smooth.
- Add whole bananas and mash with the beaters then mix.
- Sprinkle on the baking powder, baking soda and salt and beat.
- Add the Hamilton's Barley Flour and beat until smooth.
- Stir in the walnuts and/or chocolate chips.
- Scrape into 3 greased loaf pans or 30 greased or paper-lined muffin tins.
- Bake loaves 50-60 minutes at 350 F. or muffins 20-25 minutes at 400 F.
